SMOKING, CURING & BRINING
Here at The Falls Retreat, we operate a nose to tail ethos where we try to utilise lesser known cuts of meat and incorporate different techniques into our menu. We also often cure and smoke fish in order to ensure we don’t compromise on quality and flavour and you too can learn how with a few simple tips and tricks. We will cover the basics of brining, curing and smoking, explain the equipment required and share our recipes for you to recreate at home

Learn different cooking techniques and tips and tricks for getting the most flavour from your meats
Discover Brads tips on how to effectively cure and fish
Learn how to use a home smoker for hot and cold smoking fish and meats
Delicious grazing style lunch featuring our house made cured and smoked fish and meat served with delicious organic salads at our banqueting table
