FISH - COOKING, CURING & SMOKING

There is no better taste than that of a freshly caught seafood! Here at The Falls Retreat, we operate a ocean to plate philosophy and try to use the freshest of fish on our menus. We also often cure and smoke fish in order to ensure we don’t compromise on quality and flavour and you too can learn how with a few simple tips and tricks. We will cover the basics of cooking fish including curing and smoking and Brad explains the equipment required and shares his recipes for you to recreate at home

Highlights include:

  • Learn different cooking techniques and tips to get the most out of your catch of the day

  • Discover Brads tips on how to effectively cure and smoke fish

  • Learn how to use a home smoker for hot and cold smoking fish

Join us for our Bread Making Masterclass

 

SOURDOUGH BREAD MAKING WORKSHOP

Nothing beats the smell of a freshly baked loaf and its a simple process so why not learn how to make your own sourdough bread at home. Brad will cover the basics of bread making and demystify the process of using a natural leaven. He will share 3 simple bread recipes and provide everyone with a sourdough starter to take home and recreate the magic.

Learn how we utilise excess seasonal produce to create our own range of pickles, chutneys & jams. Brad will cover the types of fruit and vegetables that can be preserved, what blends of vinegars and herbs to use when you pickle and his top tips for successful jam making.

PASTA MASTERCLASS - FROM ZERO TO HERO

We have been making our own pasta here at The Falls Retreat for years and we have a tried and tested recipe that we will share with you. We will demonstrate and explain the kneading and resting process, show you how to create different types of pasta and cover the different types of tools and equipment required to roll your dough and create your very own pasta. Taste the difference and you will never want to go back to the packet version!

Come and join us to learn how to make Kombucha

 

Fermenting is a simple process but it needs to be done correctly, and in this workshop you will discover how we can manage microbial bacteria to produce highly nutritious food. Learn more about the fermentation process and why it’s so important to our health. We will show you how to make your own kombucha drinks at home to enjoy great gut health.

Vicki from Nourish Magazine will demonstrate a few of the favourite recipes from the latest Nourish cookbook, showing you how easy it is to create delicious food from scratch. Award-winning chef Brad King and his kitchen team will recreate the magic and serve it for a delicious 3 course lunch. Grab a few friends and join us for this great event in an awesome setting.

Run by our resident gardener, Nicki Murray-Orr, who has a wealth of experience and knowledge in all things gardening, each course is fun and offers an interactive workshop in the garden followed by an informal meal in our rustic Bistro barn.

Channel your inner artist with this fun Sunday art session where you can let your creativity flow as you connect with nature! Jennifer Duval Smith will guide you through this fun and explorative practice using nature journaling principles to observe and capture a plant subject. Includes morning tea on arrival, guided 3 hour art session with all materials provided followed by a delicious lunch before you take home your creative work!

The Full Monty

Our most comprehensive workshop covering all the fundamentals of growing healthy nutrient dense veggies.

Nurture your passion for gardening on this one day course with our resident gardener, Nicki Murray-Orr. Nicki will teach you a comprehensive range of skills and techniques to get the most out of your veggie gardens. She covers the basics of soil health, planting from seed, pest management, crop rotation, composting and worm farms leaving you brimming with inspiration and practical knowledge.

YOUR DAY

 

9.30am arrival. Start the day by meeting Nicki and our other attendees and share introductions over a tea or coffee with tasty treats provided by The Falls Retreat kitchen.

10am – 11am Gather around in the rustic Bistro Barn for the first workshop session which will cover garden design, plant and soil health.

11am – 11.30am Head out into the garden to see first-hand the elements of good garden design, companion planting and crop rotation and learn how these can be applied at home. Nicki will also demonstrate how she prepares and maintains her garden beds.

11.30am  – 1pm Delicious lunch served at our banqueting table. Cash bar available for drinks. Nicki joins you for lunch so this is your opportunity to pick her brains and ask questions which apply to your own garden.

1pm –2pm Nicki will discuss sowing from seed, strategies for keeping a consistent harvest, what to sow and plant at this time of the year and gardening by the moon.

2-3pm Head into the Falls Retreat kitchen veggie gardens to visit our compost and worm farm.
